Instructions for Assembly of Floating Lid of Variable Capacity Tank

Superior quality features of St. Pats Letina tanks

  • High quality lifting arms with 2 brackets (not one) welded to tank for smooth operation.
  • High quality finish of welds—polished and treated—not porous.
  • Tank ports are Swaged to increase strength (as opposed to simply butt-welding ferrules to flat punched hole)
  • Seamless manway welds
  • Reinforcing Ring on racking port
  • 2R finish, 304 German stainless steel. [2R aka BA-bright annealed]

In addition, St. Patrick's Letina provides tanks with additional quality features

  • Better quality Vent-211
  • Complete Pump-Over with spinning sprinkler on VIK tanks
  • Complete set of valves----Compare to suppliers in which valves are optional or only one of two valves is provided.

Superior Cooling jacket design

Cooling jackets are oriented vertically on the back of the tank. This allows efficient cooling with any amount of product.

St. Pats alone supplies open top tanks with 2 jackets on the back. One on top half, and one below. If tank is full, use the jackets in series. If the tank is not full, then use the lower jacket only. This prevents condensation on the inside of the tank, above the lid, which then runs down into the lid. This can result in mold growth.

Vent-211 is standard. The vent attaches to a 2" diameter pipe (~4" long). This pipe reduces the problem of wine coming through the vent. Vent-211 is better quality vent than the white plastic vents that are common to most tanks.

Swaged Port and Reinforcing Ring.

Swaging means punching a hole, then pushing out the tank wall. This makes a stronger connection. All ports are swaged.

Reinforcing Ring is actually on the inside of the tank but its outline can be seen in the photo. It is 3.5" diameter x 1/4" thick. This greatly strengthens the racking valve connection.

The reinforcing ring was introduced to the American market by Letina nearly 20 years ago.

Sprinkler of pump-over system. Pump-over is standard on all closed top Red fermenters (VIK tanks). Note this sprinkler cannot be plugged.

Sloped-Bottom Tanks—Variable Capacity

These are flat bottom tanks that are sloped from back to front (5%) to make cleanout easier.

  • Complete with 2 Butterfly Valves and Sample Tap
  • Complete with floating lid, inflatable gasket, air pump
  • Superior quality Vent-211 on all tanks.
  • Superior quality lifting arms mounted to tank with two brackets for stable operation. Hooks welded to tank to neatly wrap rope.
  • Tanks with Cooling Jackets have Thermometer and Thermowell
  • Cooling Jackets. 2 on back. Maximum inlet pressure is 35 psi. Typical flow rate is 3-6 GPM.
  • Ladder support on 1900 and 3950 liter
  • All welds are polished and treated (not porous) for sanitary food use. Beautiful and seamless manway/tank welds.
  • Tank wall is SWAGED before welding on ferrules. This provides a smooth curvature for strength and sanitary finish. [as opposed to butt-welding a ferrule to a simple flat punched hole]
  • Reinforcing Ring is welded to tank for upper valve. This greatly increases strength---allows mounting of thru-valve mixers.
  • 304 German Stainless Steel. 2R (aka BA—bright annealed, aka mirror) finish on inside. Marble Finish on outside.
  • Welded legs

Pneumatic Float
Information regarding the Inflatable Gaskets
All of the variable capacity tanks include a pneumatic float which seals the tank at any volume. A pneumatic float is a stainless steel lid with a surrounding inflatable tube. Place the lid on the wine and pump up the tube to seal. Pump, pressure gauge, and valve are included. To remove float, simply open needle valve to deflate the tube. A 2-way vent valve prevents air from entering but will release pressure. The valve also works in the other direction, to let air into the tank. This is necessary when pumping out the tank.
Please note: The variable capacity tanks can be used as fermenters. However, it is best not to use the pneumatic float during the primary fermentation--simply cover the tank until the fermentation subsides. You can use the pneumatic float during fermentation but place it at least 8" above the surface. Once the fermentation has stopped, lower the float to the surface of the wine.

To seal the tank. Simply float the lid on the wine, then pump up the tube to make the seal.
The most common source of leaks is the soft vinyl tubing to tube stem connection and the soft tubing to pump hose barb connection. Immerse the tube in water to be sure there are no leaks.
How the pump and valve works: The Pump is connected to the Inflatable Tube by a piece of vinyl tubing. The pump has a clever but simple valve on its output. Open the valve all the way to let the air out to remove the lid. Close about 2/3 the way to pump the tube up. [Air can go in but not out.] Then simply close the valve all the way to seal the tube completely [air can neither go in nor out of the tube].
Maintenance: It is recommended to cut an inch off each end of the vinyl tubing every year and replace the vinyl tubing if it looks old. The tubing is stretched onto the barb connectors and this can leak if the tubing dries out and gets brittle.
