These are flat bottom tanks that are sloped from back to front (typically 3-6%) to make cleanout easier.
The most versatile style of tank suitable for red and white, fermentation and storage.

The Closed-2300 and 4900-A tanks have a perforated steel plate on inside of tank that covers the valve outlet--permits pumping over without moving skins. This screen is 40" H x 18"W x 3" D, preventing it from being plugged and collapsing when pumping with a positivie displacement pump.

Fermentino bottom--Bottom is formed as a chute to feed the manway. Easiest of all tanks to clean out skins.

Rotating Arm for TriClamp Valve
The original simple Rotating Arm—designed, manufacutred, and introduced to the wine industry by St. Pat's
Allows you to drain up to 8" above or below the racking valve of the tank. It is also an answer to any tank with only one valve and the lees reach the valve height.

The Rotating Arm is an independent fitting that is inserted between the butterfly valve and the tank ferrule. Prior to draining, loosen the TriClamp clamp slightly, rotate the Arm until the drain tube is above the lees, and retighten the clamp. The drain tube can be placed anywhere between 0" and 8" above or below the racking valve. If the tank has a single sidewall valve, the drain tube can be placed anywhere from the bottom of the tank to 8" above the bottom.

Rotating Arms work with any type of gasket (EPDM, silicone, or teflon). However, I prefer teflon because it turns a little easier. You need only to loosen the clamp just a little to turn the arm. Also, I recommend leaving the arm in the horizontal position when not in use to prevent lees from settling into the arm. Then open the valve slightly while turning the arm until the juice is clear, and retighten clamp. You will now drain all the wine that is above the lees.

Please note there is a reduction in the output with the Rotating Arm in place. Each Triclamp size is effectively reduced by 1/2". For example, the RA250 will have the output of a standard 2" valve. Also, please note this is not a piece of stainless steel pipe--it is a true sanitary high polish fitting.

Level Gauge on our tanks always have two valves on bottom cock. The side valve lets wine into the tube from the tank. The bottom drain valve allows you to drain the tube (after closing the tube off from the tank). This bottom drain is essential if you do not have return of level. Stainless steel protection for the tube and level markings are just visible at top of photo.

A Level Gauge on an open top tank (variable capacity) must have an open tube at the top. (Cannot have 'return of level'.) A Level Gauge on an open top tank is useful only during filling and emptying of tank. The level gauge must be closed off and drained at all other times because the top of the tube is open.

However, a level gauge on closed top tank can be the same or can also have 'return of level'. [Return of level is simply another fitting at top of level tube that sends the wine back into the tank at the top.]

Cooling Plates for Wine Tanks
These plates are easily installed into lids of variable capacity tanks. No welding needed.
304 stainless steel. Polished finish. All plates sold complete with threaded coupling kit to easily attach plate to lid or any flat surface.

Maximum operating pressure is 1.5 bar (22 psi). [Plates are pressure tested to 12 bar (180 psi).]

Inlet/Outlet have both 1/2" male pipe thread and 3/4" hose barbs.
[You can either thread on a 1/2" fitting (for example 1.5" TriClamp x 1/2" FPT) or clamp 3/4" hose on directly.]

Cooling Plate vs Cooling Coil. We manufactured cooling coils for the beer industry for over 10 years (from both stainless steel and copper). Cooling plates are more efficient due to greater surface area/volume ratio. There is a mistaken belief that plates are inherently more prone to leak than coils. This is based on the false belief that coils are seamless. Stainless steel coils have a welded seam. The most important issue in selecting a plate or a coil is to know that it has been pressure tested. Each of our plates are individually pressure tested to 12 atmospheres, 8 times greater than the maximum the plate should be used at.

Plate mounts very easily with included kit. Stainless kit includes threaded couplings welded onto each inlet/outlet tubing along with nuts and rubber washers. You simply need to punch (or hole saw) 2 holes (11/8" diameter). We can punch the holes in a lid for $20.

Labor charge for drilling holes in lid for Cooling Plate $25 Cooling Plate with Welded TriClamp Connections
1.5" TriClamp ferrules welded to the inlet and outlets tubes. You cannot use these through the lid of the tank because they do not have the threaded couplings to seal the holes in the lid.
Please note. The plates require a minimum of 4" plus the plate height. For example, the no. 12 plate needs 36" minimum of vertical space in the tank (4" + 32").
All of these plates will ship via UPS.

Pneumatic Float
Instructions for Assembly of Floating Lid of Variable Capacity Tank
All of the variable capacity tanks include a pneumatic float which seals the tank at any volume. A pneumatic float is a stainless steel lid with a surrounding inflatable tube. Place the lid on the wine and pump up the tube to seal. Pump, pressure gauge, and valve are included. To remove float, simply open needle valve to deflate the tube. A 2-way vent valve prevents air from entering but will release pressure. The valve also works in the other direction, to let air into the tank. This is necessary when pumping out the tank.
Please note: The variable capacity tanks can be used as fermenters. However, it is best not to use the pneumatic float during the primary fermentation--simply cover the tank until the fermentation subsides. You can use the pneumatic float during fermentation but place it at least 8" above the surface. Once the fermentation has stopped, lower the float to the surface of the wine.

To seal the tank. Simply float the lid on the wine, then pump up the tube to make the seal.
The most common source of leaks is the soft vinyl tubing to tube stem connection and the soft tubing to pump hose barb connection. Immerse the tube in water to be sure there are no leaks.
How the pump and valve works: The Pump is connected to the Inflatable Tube by a piece of vinyl tubing. The pump has a clever but simple valve on its output. Open the valve all the way to let the air out to remove the lid. Close about 2/3 the way to pump the tube up. [Air can go in but not out.] Then simply close the valve all the way to seal the tube completely [air can neither go in nor out of the tube].
Maintenance: It is recommended to cut an inch off each end of the vinyl tubing every year and replace the vinyl tubing if it looks old. The tubing is stretched onto the barb connectors and this can leak if the tubing dries out and gets brittle.
